Palisade Peach season is in full swing and it’s time to celebrate Colorado’s sweetest fruit in the best way possible: dessert! Juicy, golden and bursting with sunshine, peaches are made for baking, blending and scooping into late summer treats that will have everyone asking for seconds.

Here are three simple, crowd-pleasing recipes that let peaches shine in all their glory.

Peach Cobbler

A rustic classic that never goes out of style. Sweet peaches meet a buttery topping for the ultimate summer comfort dessert.

6 fresh peaches, peeled and sliced
1 cup sugar (divided)
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup milk
1/2 cup unsalted butter, melted
1 tsp cinnamon

Preheat oven to 375°F.

Toss sliced peaches with 1/2 cup sugar and cinnamon. Set aside.

In a bowl, mix flour, remaining sugar, baking powder, salt, and milk until smooth. Stir in melted butter.

Pour batter into a greased 9x13 dish. Spoon peaches over the top.

Bake 35–40 minutes until golden and bubbly. Serve warm with vanilla bean ice cream.

Peach Hand Pies

Portable, adorable and perfect for picnics or school lunchbox treats.

2 cups diced fresh peaches
1/4 cup sugar
1 tbsp cornstarch
1 tsp lemon juice
1 package refrigerated pie crusts (or homemade)
1 egg, beaten (for brushing)
Coarse sugar for sprinkling

Preheat oven to 400°F.

Stir peaches with sugar, cornstarch, and lemon juice.

Roll out pie crusts and cut into 4–5 inch circles.

Spoon peach filling in the center of each circle. Fold over into half-moons and seal edges with a fork.

Brush with egg wash and sprinkle with sugar.

Bake 15–18 minutes until golden. Cool slightly before serving.

No-Churn Peach Ice Cream

Creamy, dreamy and no ice cream maker required.

2 cups heavy whipping cream
1 can (14 oz) sweetened condensed milk
2 cups fresh peaches, peeled and diced
1 tsp vanilla extract

Puree half the peaches until smooth. Dice the rest for texture.

Whip heavy cream until stiff peaks form.

Fold in condensed milk, vanilla, peach puree, and diced peaches.

Pour into a loaf pan, cover, and freeze for at least 6 hours.

Scoop and enjoy your peachy creation!
