1 cup fresh strawberries
4 basil leaves
1 tablespoon honey
1 tablespoon lemon juice
Prosecco or champagne
Fresh basil for garnish
Blend strawberries, basil, honey, and lemon juice until smooth. Add a spoonful of the strawberry mixture to each champagne flute and top with chilled prosecco. Garnish with a basil leaf and serve immediately.
Peach Bellini
Nothing says summer quite like fresh peaches.
2 ripe peaches, peeled and sliced
1 teaspoon lemon juice
Prosecco
Blend peaches and lemon juice until smooth. Add two tablespoons of peach puree to a champagne flute and slowly top with prosecco. Stir gently and enjoy.
Blueberry Lemon Sparkler
Light, refreshing, and bursting with color, this cocktail is perfect for outdoor brunches.
½ cup blueberries
1 tablespoon simple syrup
1 ounce vodka
2 ounces lemonade
Sparkling water
Lemon slices for garnish
Muddle blueberries and simple syrup in a glass. Add vodka and lemonade. Fill with ice and top with sparkling water.
Garnish with lemon slices and a few fresh blueberries.
Pineapple Coconut Brunch Cooler
For those mornings when you'd rather be sitting on a beach somewhere.
3 ounces pineapple juice
1 ounce coconut cream
1 ounce rum
Splash of sparkling water
Pineapple wedge for garnish
Shake pineapple juice, coconut cream, and rum with ice. Pour into a glass filled with fresh ice and top with sparkling water. Garnish with a pineapple wedge.
